a demo is like a non-official song that a band records. They (sometimes) record it to get the idea of whta the song sounds like, and they make changes to it to make it better.

When some bands record, they first of all jam together, work out a song, and then all play together on a basic track. Thats pretty much a demo. From there on, they each go into the studio one by one and lay down their tracks. Drum fills, tempo, guitar riffs and lyrics often change slightly.

Prime example is the offsprings demo for out on patrol (revelations). The demo had a wicked intro solo and post chorus lead going on, but it got cut from the final song.

yeah, sometimes the demos are better than the final version, like the Living In Chaos demo, for example.
